This flavor combo was quite a hit at a recent baby-shower I attended, so I thought I’d share it! [even though I have no photos 🙁 ]
What I used:
1- 8 oz package of cream cheese-softened at room temp
1/2 cup non-fat Greek yogurt
1 Tbsp chopped sun-dried tomatoes {they are like tomato raisins. 🙂 }
2 Tbsp dried Basil
4 Tbsp grated parmesan cheese
1/2 tsp glucomannan {completely optional, but does firm up the consistency}
2 tsp good kosher or sea salt
1 tsp pepper
2 tsp powdered garlic
2 tsp powdered onion
Directions
Put all the ingredients in a bowl and mix with a beater for 3-4 minutes or until fully incorporated.
Chill. Form a ball or log and cover with chopped nuts or seeds {we have a nut allergy so I used sunflower seeds} or keep in a bowl to serve as a dip. Serve with your favorite crackers, but to keep this [S], serve with {THM} flax or other seed crackers!
That cheese ball was AMAZING!! I would love to make it–but I have never heard of glucomannan!!! Where do I find this ingredient? 🙂 Thanks!
Thank you so much for stopping by, Mrs. Owens! Glucommannan is a dietary fiber powder derived from the konjac root. I think it is mostly available online for purchase. I have never seen it in a store-even the “health store.” It is used as a thickener in foods [similar to cornstarch], and is good for those of us trying to keep our diets “low-glycemic”-such as on the “trim healthy mama” way of eating. It has little to no effect on the blood-sugar, like corn starch or flour would. But you could sub out the glucomannan for a tsp of cornstarch to get similar results. 🙂
