I’ve recently seen many “upside-down” muffins and cakes being posted on different Trim-Healthy-Mama blogs, and my mom made the CRANBERRY one from their facebook page for me over Christmas. It was… seriously good!
My newest version had me wanting to make a second one… as soon as I’d finished eating the first!
You can feel free to sub any nut you want, but watch the calories and carbs… they add up! {I think I went a bit overboard with this first try… 🙂 }
Ingredients:
 1 egg
1 TBSP water
3 TBSP dry mix [or 1 TBSP each: coconut flour, flax seed flour and oat bran {EDIT: with a pinch of salt and 1/2 tsp baking soda!} -it’s not exactly the same, but should yield a similar result]
1 tsp vanilla extract [or extract of your choice… maple flavoring sounds REALLY yummy 🙂 ]
2 tsp butter or coconut oil
sweetener: I used 2 truvia packets
1 1/2Â TBSP walnuts [or nut of choice]-I think I’ll chop them next time
Instructions
In a small oven or microwave-proof bowl/mug, place butter, sweetener & nuts.
In another container: beat egg well, add remaining ingredients. Mix thoroughly, add on top of butter & nuts.
Bake: oven at 350* for 12-15 minutes or in microwave 2-3 minutes {this is just a guess, as I do not have a microwave with which to experiment–EDIT: maybe just start with 1 minute!!}
Once done, {{carefully!!}} invert onto a plate and allow to cool enough to not burn your mouth 🙂
